We've been to the Del Mar twice and the Tucan once. It seemed to me the resorts are set up in sets of pairs. I felt the Del Mar and Beach were really only which set of buildings you slept in. Is the Lindo/Maya not this way?
The Maya is usually a couple hundred dollars more and I'm thinking of my whole family. Can someone tell me why the difference in cost?
Do I have the set up wrong in my memory or are the facilities separate?
Since its not just my wife and I we might just fall back to the Del Mar.

The Lindo and Maya are not exactly the same. The Maya rooms are all junior suites and are larger. All rooms have a sofa bed and the bathrooms have a jacuzzi and separate shower and the balconies have a hammock swing. Not a huge difference from the Lindo, but definitely a bit nicer and larger. One other "perk" of the Maya is there are two restaurants just for Maya guests, the Japanese and the Gourmet. The Lindo does have it's own Gourmet and can use the Japanese at the Beach, but the Japanese at the Maya is nicer - smaller tables and lobster is on the menu. You can also use the wet facilities at the spa at no charge if you are a Maya guest. I think you have to pay for this if you are a Lindo guest unless you book a spa service.

The Maya also has elevatos in the buildings.
  YOu can use the Maya lobby and all other facilities other than the two restaurants actran mentioned if you stay at the Lindo.
  You say you may "fall back to the Del Mar"....if you stay at the Lindo or Maya you can eat ala carte dinners every night. At the Del Mar you are only guaranteed three ala carte dinners for a seven night stay.

If the price is less than $200USD then go for the Maya.  Otherwise the Lindo is the better overall value.  The difference in the Japanese (Maya vs Beach) is so negligible as to be no big deal.  I feel the Maya gourmet is only a small bit better than the Lindo and not worth the additional cost if that is your only criteria.
