Just read that most restaurants are open air buffets? What about the ones that you make reservations for- Japanese, steak, etc? Are they buffet also? or do you sit down and order?

If memory serves me right, The Japanese is enclosed with air conditioning as well as the Brazilian, Mexican and the Mediterannean. The steakhouse is open air as well as the tropical and the buffet. The daytime grills that are close to the beach become the Tropical and Steakhouse in the evenings. The specialty restaurants are a la carte so you just sit down and order from a menu, although they also have a self serve style appetizer and salad area as well as desert buffet.
